Trying to increase production of the fields I increased an 8X8 field from 4 workers to 8 but had no increase in yield.
Yield typically won’t be affected by how many workers are assigned, unless there’s not enough workers to even get the crop planted. That being said, if you are starting to see messages that crops have been left to rot (which can happen either before or after harvest), this would indicate that you don’t have enough workers assigned to your farms in general. The workers for farms are a pooled resource, so technically you could have 0 workers for a particular field, but max on another and the one with 0 workers would still be worked on. There are some caveats, or points of care to note here though, if your fields are too far away from adequate housing (i.e. travel time is huge) or the farmers have lots of other jobs to do (i.e. apiaries are collected by farmers) then this can affect how many workers are actually harvesting your crops.
As a side note, Yield is affected by other factors such as the soil composition (clay vs sand), weeds, rocks, and fertility. Once you get these factors in balance, you’ll notice that your yield is often significantly more than what was planted (I haven’t run the numbers, but I’ve seen in the range of 25% more yield).
