Help me understand food production numbers

I’m a little confused about the food production numbers. Take this typical screen:


What confuses me are the Root Vegetables (RV) and Preserved Vegetable (PV) numbers. Did they deduct what was used for the canned vegetables from the RV produced? If not then those vegetables are double counted in the total vegs (34094).

Here’s why. It says I produced 8999 RV and 3118 PV, for a total of 12117 for the vegs. Total veg production is 34094, and if I deduct greens and beans I get 12117. That means the total counts RV and PV as two seperate items. But if I harvested 8999 RV that’s the total amount of vegs I produced whether or not some were canned, and that’s all the total should include. You don’t gain 3118 more vegs by canning them because you used the same amount to can them.

There is a similar issue in the consumed column and also concerning Fruits and Preserves. So what do these numbers actually count?

Yes, root vegies and preserved vegies are double counted. Meat and smoked meat too, same as fruits/berries and preserved fruits and milk/cheese in dairy. So those total data for categories are quite useless.
