There is a post in the financial budget that pops up at times (summer month?) that says ‘Manufacturing’. It always an even amount of 100s (i.e. 100, 200, 300 etc). What is that number representing and what is it composed of? Anyone know?

Specifically, you get 100 gold (in the form of gold ingots) of manufacturing income for every 5 gold ore you refine in a foundry (along with 4 coal/coke).
This is a very lucrative income stream once online! Even non-permanent gold mines usually contain many thousands of units gold ore, and that can be turned into 20 times as much gold ingots, so a typical gold mine is the equivalent of about 100 000 gold.
I would strongly advise you make sure to turn off gold storage on all your warehouses so that it instead goes into you much easier to defend treasury vault, which is also hopefully immediately adjacent your trading outpost building, so it can be efficiently accessed by the trader(s).
