I have too much Wax and bows (now I use crossbows) for example.
So I need something to destroy them, or sell them for 1 gold to free some space.
I am starting to mass product candles to use wax …!
I agree. There should be a way to clear space in inventory. Most games let you discard and put an extra warning after. Maybe you can choose to put food that’s about to spoil in the compost early.
Well, you can tell your archery folk to simply not make bows iirc. Or limit the production to just one of them compared to how many you have of the other stuff.
Candles are a good trading item so yeah, make more of those and sell them on.
Yes, you can stop bow production.
Yes I have stop producing bows.
But when you create crossbows, they replace their bows with crossbows, and then put bows in stock.
And bows stay forever in stock! 
So an option to delete some items in stock can be interresting, or sell them for 0 gold to a trader.
