I think it would really help us out if you were able to give us an option to allow certain building to halt production when you run out of a resource. Many times ill be busy dealing with something like dealing with a raid and forget that i ran out of iron, instead of those workers sitting around doing nothing having them go back to laborers until more is brought in would help out a lot. Sorry for the length
There are options to handle that already. It may not be as direct as you want but work great.

go into the building and lower the number of workers making product. Those workers you released go into the labor pool. resources will not run out then.

If you need lots of product then increase the number of workers that supply the needed resources to make that product. Since never run out of resources no peeps stand around doing nothing.

use production limits. Set up your town so that you never far out pace incoming resources.
example. I have 2 furniture buildings. 1 makes furniture 24/7 and 1 is production limited. when 100 furniture in global the 8 workers go right into the saw mills. I have 3 saw mills. 2 are running 24/7 the third however is production limited. When I hit 100 furniture it means I am low on panels/planks so the third saw mill is activated and filled with the previous furniture workers.
it is about fine tuning. Trust me you are much better off being efficient and not running out of resources than trying to add hacks that treat the symptom instead of the fixing root cause.
Its not about hacks, sometimes you just dont see you are out of something or maybe you play on the highest difficulty and lose 20 people during a 200 raider raid and you dont have enough people at the time to keep getting certain resources. Thats just an example. Like it is impossible on some maps to not run out of resources before you have a level 4 town. Like the map im on i dont have any iron anywhere so i have to wait for traders at the moment. And i forgot to shut off my forge so they sat around for a year doing nothing.
IMHO it is a hack. It is like your government running out of money so they
print more instead of getting efficient. in your case the root cause is running
out of resources to begin with. In real life if that happens because the person
in charge of inventory doesn’t keep stocked they will be fired.
If you get ahead of the curve none of what you said would matter.
It sounds like you are spread too thin do a few things well instead
of a dozen things poorly because losing 20 peeps (losing 20 is too
much anyway so something is wrong there) should never hurt your
town that much.
Hmmm… well I play hardest settings on the hardest no resource map and I am
swimming in resources and gold and I do not even have any mines on the map.
I just buy what I need. So it is possible if you just do a few things.
Travel time the #1 thing that makes your town good or bad.
Next do not try to have every tech it is not needed,
Next do not try to make every item. Not needed.
Next do not use every item. like tools. Not needed money pit, tools are
wasting time and iron will hurt your town more than help.
There is nothing wrong with having all your food coming from crops only.
There is nothing wrong not making half of the items you could make. Save the
workforce for critical stuff and get your global crit stuff into the thousands total
in inventory before opening a new tech/item.
