What is the maximum number of items they have had in the center of town? And at what point did they stop depending on gatherers, hunters and fishermen?
as you go and get stable gold you can buy everything from merchants haha i keep miners to a minimum haha
I never stop depending on gatherers for herbs, willow & roots (if the map happens to have some).
Once my barns are maxed I can ditch hunters and fishermen.
Merchants are an unreliable source of material and goods. Even with loads of gold to buy everything, there is always a point where you’re out of something because 3 years in a row you didn’t have one provide what you need.
You need bricks for maintenance, so should be able to at least make bricks for it. I have a brickyard just for that, when I need to do improvements I buy bricks (brickyard takes a lot of space for a low production).

I buy everything I need. gold , stone ,sand and clay all ran out long ago. Once you get to
a certain point with stable income you will buy what you need and free up all the workers. No Need
wasting 6 workers on 1 mine or 8 workers in 1 glass factory. I don’t even have most buildings anymore.
I deleted all my fishing huts and hunters cabins long ago.
way less need for repairs and materials to repair and I have hundreds of free workers.
This is where the game is flawed. It is now too easy and I’m drowning in gold lol
