When you try to build a road on too steep an incline you just get a too steep to build notice. Would it be possible to have a stepped road built instead? I think it would look great on hillside and mountain top settlements. Perhaps have them only accessible to foot traffic. Just a thought.

No I just mean roads or paths with steps. Like these in the old Yorkshire town of Whitby. Whitby 199 steps - Wikipedia

Switchback roads would be great too. When you start a road It assumes you want to go straight up the hill. It could allow you to put a road sideways on a hill across the slope like this:

I did a road up a hill just yesterday, it required flattening the terrain a lot, but the people charged up the uneven slope off to the side.
