I’m wondering if there are any vegetarians here? Meat products and I had a falling out about a decade ago :eek:
I find my go-to food is actually a stew I tossed together as a poor student from stuff I had in the fridge, even if you’re not a big stew fan. Now I’m no Gordon Ramsay but I’ll try to explain it as best I can:
(for 2 people)
-3-4 medium size potatoes
-2 large peppers
-a can of pre-soaked lentils (or you can use dried ones, add more water and reserve more time for the cooking) - this is optional, I just think lentils are awesome
-a can of beans of your choice (I prefer the ones in tomato sauce but plain kidney beans are good too)
-2 broth cups or stock cubes of your choice (I use the vegetable flavored one but it’s up to you)
- 1 onion
*salt
*some sausages for the meat lovers (4 will probably do)
*oil for frying
Peel the potatoes and cut them into small cubes, put them into a pot with one of the cups of broth.
Add water up to the point that the potato pieces are just submerged. Put the heat relatively high, but turn it to a medium when it begins to boil.
Meanwhile, wash the peppers and clean them, then cut them to small pieces.
Drain the water from the lentils (if you have the soaked ones) and the beans (unless they’re in that sweet sweet tomato sauce). When the potatoes begin to boil, put in the peppers, lentils and beans, add the last cup of broth and check on the stew from time to time and mix it so it doesn’t get stuck in the bottom. Remember to lower the heat to medium if you haven’t yet.
(The rest of the ingredients listed below don’t need to be softened by boiling, so add them towards the end of the cooking, giving them a few minutes to give flavor to the mix.)
Cut the onions, again, however big you want the pieces. It’s time to heat up a pan and put a bit of oil on it. Fry the onions until golden brown, add them to the stew.
If you’re a meat lover, cut the sausages to about a centimeter thick pieces and toss them on the pan, fry on both sides until lightly brown. Add it to the stew.
I haven’t timed this part, but the stew is ready when the potato pieces are soft, which depends on how big you left the pieces. I’d suggest to check every few minutes while you mix it anyway, the stew gets pretty thick and hefty so make sure you keep the heat on medium at the most to not burn it to the bottom of the pot. Usually around 10 minutes after you add the beans and peppers it should be ready.
Taste it towards the end and if you think it needs some more salt despite the broth, then add some! If you don’t have any salt, feel free to go get some from Grim Dawn’s Steam “Discussions” section.
