I would like to follow a build that uses Farath’s cube to convert damage. Can I play this character and reasonably expect to find the item?

Reasonably? That depends what is reasonable for you, but the chance to find a specific legendary, on your own, while playing the campaign, is fairly tiny. If I had to put money on it, I’d put it on no.
If you don’t mind trading with other players, you’ll have an easier time as you can amass Legendaries to offer up later. If not though, I’d say it’s pretty unlikely.
I would have a few backup builds in mind if I were you. Or make a good build that can farm steps of torment and such and then transfer it over to your arcanist build

I’m sorry, I’m a new player, I do not have mythicals I think, just a few legendary’s
Some legendaries are rare but this one is not. If you run challenge dungeons you should find it eventually. Trading is sure faster though.
If you are not averse to it there is a library of most items online. You can with some tinkering use it to drop the item in your shared stash xfer it then go back to your earlier shared stash. I have done this a few times (and obviously can be seriously exploited and damage the fun if you lack discipline)
I figure after so many different mods and playthroughs that I will just factor it all together and reward myself with a specific legendary from time to time.
Because the loot tables are so diverse and expansive that it could be months and months or potentially years to get that perfect item. Of course you can also do trading like people here have alluded to.
Keep in mind that those builds mostly have the best possible item. It doesnt mean you cant use other items or alter your build for the items you have.
Maybe the best would be to change your build better fit those items you have or start another class combination, eventually you will find what you need.
Also, as others mentioned you could just “craft” the item, for example via GDstash. I heard from one guy who wasnt into trading that he looked into the trading threads, looked for the item he wanted and what the others wanted and if he found a match he gave himself the desired item and deleted the ones the other player wanted. Feels a little bit less then cheating.
The only builds you can really farm for are the ones using “Krieg”-Set or “The Dark One”-Set. There is also a pre-Deathknight build that uses only craftable/buyable gear:

Most of the time you dont need a specific items for beating the base game even on ultimate, all those guides are just the top tier builds.
