Hi, new player here. After coming across the Marauder Belt and Fury gun early on, I fell in love with the Dual Pistols thing, and having already picked Demo/Arcanist specializations and not knowing any better I started following Skorpius’ “Mad Sorcerer” build (which I can’t link as it’s my first post).
But I gather that’s now out of date. Is there a more up to date version of this type of build?

Not going to lie to you man - you picked a tough one to start with.
The gunslinging sorc is going to be quite an item dependent toon, and even then, it’s going to pale in comparison to the purifier because inquisitor.
I have tried many times to make it work, and it CAN work, but it’s going to be very lackluster in the late game.
My suggestion is to start a whole new toon and to follow x1x1x1x2’s guide. http://www.grimdawn.com/forums/showthread.php?t=74454
It might seem like a waste, but if gunslinging is what it takes for you to have a blast buh-dum-tss, then I believe any time you’ve already sunk in with this toon is sunk cost, and any further time you spend with this toon will only add to that.
Damn, “start another char” is just what I didn’t want to hear, because it puts me in a bit of a pickle. I don’t have much time to play and being fairly attached to both the storyline and this char, I don’t think I can go through it all again so soon

That guide is pre-AoM, do you play vanilla game or AoM?
The advice I’m giving is geared towards progressing as quickly as possible through the game. By that I mean getting gear, leveling a powerful character, etc.
But it doesn’t necessarily mean that that’s the best way for you to enjoy the game!
If going a sorc dirty harry style is what you want, go for it.
You can always post your GT link on the forums and ask for advice every now and then.
In my mind it’s more of a Jonah Hex “occult cowboy” type of deal, but yeah

Spec for fire bomb caster, if you, at any point, decide you don’t like ranged guns anymore. Dropping projectile nukes everywhere, can be very fun, and satisfying.
You dont have to start a new char. If you want to play dual pistols/2H ranged, you can install GDstash and simply respec the Arcanist for inquisitor.

Final word on this: I respecced into the Purifier build recommended above. Luckily my items weren’t that far removed from the ones used in that guide at roughly my level (now 47), so it’s fairly easy for me to hit the ground running.
It’s surprisingly quite a bit more powerful of a build than the Demo/Arcanist build - yet it also preserves something of the idea of mixing gunplay and magic, except that instead of a magic bubble I now have a magic circle and a hex type thing. In fact visually it probably says “magic” even more.
It does make me a bit sad that the disparity in power is so noticeable, as I did like the Arcanist theme. Maybe Crate will get around to tweaking it some day. But meanwhile the Purifier certainly satisfies my dual wielding itch!
