as for the drop chance, drop chances from chests aren’t listed Notable loot - Manifestation of Korvaak, the Eldritch Sun - Grim Dawn Monster Database, so would need to dig through the game files and see what it’s set to for that chest/helm
it’s probably safe to assume it’s between 2-6%, like other such similar items/drops (vanquisher/morgoneth), - probably leaning towards the lower value

Just as a recommendation:
the link Gnomish provided is to the grim tools database. It’s wonderful for looking items like that up, worth saving.
And as long as you farm the monster that drops the item, your pretty assured to get the item within a decent time frame. GD is very forgiving with drop rates compared to other ARPG’s that I play, it’s one of the reasons I still enjoy it to this day.
I remember wanting a specific set for a build that dropped from specific bosses, and IIRC I got the set after a week of farming or so. the whole set. Not bad at all.
I think that depends. I’ve farmed Alkamos over a hundred times and don’t have the full set of rings. But I got the Morgo set in about 10 tries. RNG varies a lot I’ve found lol.

morgo set has much higher drop rates, and has pieces that drop from enemies that spawn multiple times
alkamos rings have like 1% drop chance each, drops from 1 enemy, and you can’t get both drops in one go as the rings exclude eachother in the drop table iirc
and if you played from back before the drop rate increase and are counting those runs in too; drop chances were like half then of what they are now
stupid stupid insanely rare item 
sole redeeming factor is SoT can be cleared rather fast on movement skill spammer like SS because you can travel long in SoT layout on a single SS/Blitz
but yea, most items GD are really generous and forgiving to get, other items are still really rare, but still better than some other games with their multiple decimal level 0.000x dropsrates etc
