hi there, I’m leveling a sorcerer and being new to the game i was wondering if its better to focus on demo or arcanist first?
also, do i want to invest in mastery quickly to access higher level skills?

I levelled a ranged dualwield sorcerer using firestrike with Rhowan’s Crown devotion. All the way to Ultimate level 85, it was before AoM. Works like a charm. Grabbed passives and buffs from Arcanist.
Keep the gear levelled and you should be fine.
Personally I´d level with Demo, Firestrike + Explosive Strike/Searing Might, all you need is a two-handed weapon, ranged if possible.
Arcanist leveling with Olexra´s Flash Freeze - Abolute Zero can be done also, massive AoE damage, singele target dmg not so much, wouldn´t be my choice.

I actually am leveling a sorcerer atm, so this is coming from recent experience. 
Depends on what kind of Sorcerer you want to play? TigerMark’s post pertains to a gunslinger using Fire Strike.
You could also play a caster using Olexra’s Flash Freeze for fast clearing of groups and Fireblast/Greater Fireblast for a spammable skill (until you replace it with whatever you want to specialise in such as Callidor’s Tempest).
Rush and combine this with Devastation and you’re set. Demolitionist will come in later as support/defense (Flashbang, Flame Touched, Vindictive Flame, Blast Shield etc.)

I’ll echo the firestrike and rush the crown devotion for leveling, I’ve leveled a few demos and I find that the easiest way and quickest way, especially ranged. My last one I leveled was actually a sorceress and I ended up doing firestrike until mid 30s, but decided to have a little fun and max mortar trap and flash freeze. It wasn’t the most efficient thing ever, but it was pretty quick and fun to play especially with a +1 mortar trap item because 1 overcap lets you get a second mortar down. Around 55-60 I speced to my actual build which is BWC and devastation and it’s also been fun playing through elite now with that.

Also, I found a belt that lets me dual wield, should i use pistols ot 2-handed?

Count me as another Fire Strike/Explosive Strike Rhowan’s Crown gunslinger sorcerer. 
Rank up Explosive Strike as fast as you can without neglecting the mastery bar (usual 2-1 rule), since the radius starts out tiny. I prefer a pistol to a two-handed ranged weapon. The latter has better character sheet dps, but the former is faster firing and works better in practice, at least for me. I’m guessing the character sheet calculation doesn’t count the AOE from Explosive Strike, and since enemies almost always come in groups in this game that’s what’s important.
Getting to Rhowan’s Crown - Scholar’s Light, Hawk, Empty Throne, there you go. Looking at grimtools, apparently if you have AoM there’s a Quill devotion that looks good, so Scholar’s Light, Quill, keep the purple crossroads point in should also work.
Dual pistols - sure, try it out. I plan to when I reach equipment that will let me. I expect I’ll be bouncing around between pistol + caster off-hand (current setup), pistol + shield, and dual pistol as the character levels into new gear.
