For blademaster pierce build
In the beginning, there is no pierce damage 1h weapon in shops.
So, does any % armor piercing 1h melee weapon work anyway?
Or, can I use any 1h melee weapon?
For Infiltrator build
If I choose Infiltrator route, I think cold damage based build will be like bread and butter due to nightblade has so much skills which have cold damage effect.
But, Amarasta’s Blade Burst uses only second weapon; so I must use 2h cold based melee weapon.
By the way, if I use 2h weapon, I can not use Breath of Belgothian (Pneumatic Burst modifier). Despite the fact that this situation, word of renewal may be used as second heal skill.
And Rune of Hagarrad will support cold based build, I guess.

Armor Piercing converts physical damage into pierce. You want the maximum % AP on weapons and gear. The best way to obtain it is Blades of Nadaan constellation and high AP weapons such as Dermapteran slicers (for start).
You can farm the Dermapteran slicers near the Homestead from bugs staggering around. They are indeed good if you find few with Pierce bonuses.
Good example of Pierce blademaster for endgame. It can be performed as infiltrator too.
Good example of Cold Infiltrator based on Rune of Hagarrad.
There are pros and cons to each weapon choice you make. DW melee allows you to use the melee WPS line, and range allows you to use the inqui WPS line.
2H weapons allows RoS and ABB to hit like a truck. DW ranges also allows you to use ABB with both weapons.
It really depends on how you want to play the character. There is no right or wrong. Successful infiltrators have been done using all sorts of weapons.
From mad_lee’s super polished belgothian infiltrator, to the weird northern wyrm’s chills like caster I did - the infiltrator is a very versatile class.
Other than what veretragna said about Armour Piercing, you also don’t want to pick a weapon with conversion like “15% Physical damage converted to Fire damage” as Armour Piercing occurs separately after this so would be a loss in damage.
