The mushrooms in the game, I realized that I almost never have them stored, is it because the villagers consume them immediately or they get lost very quickly?

Mushrooms come in at unit numbers much lower than any other food type, resulting in almost immediate consumption.
Where you gather from four, six or more spawn points of Greens or Berries in a work area, there is usually only one or two Mushroom spawn points, if any.
You may gather from a Mushroom spawn for over a dozen years before you equal as much food as a single year’s worth of a small Farm field’s crop.
- AND you don’t have the option of concentrating Mushrooms the way you can Berries, so 'shrooms are always going to be a really minor part of the total food supply.
