There are no vitality relics for Shaman and Nightblade… It should change…
Are there other classes that don’t have a damage type they support on a relic?

Depends what you mean by ‘support’. If we take that to mean they provide some -RR% for it, then yes, plenty. Necro doesn’t have phys, cold, or poison relics for example.

Occultist doesn’t have pet relic, though pet is not a damage type.
