With the much higher demand for honey, the addition of pastries, and the challenges of the changing number of farmers, I think it would be ideal to make beekeeping a separate profession.

Agreed, or maybe it can become part of some tier 2 upgraded gatherer / herbalist hut. Gathering and planting herbs, tending to bees…
Does it mean that this beekeeper building with his own workers, will also increase the honey and other product in yield? Maybe also upgraded into T2 with space for more workers and higher output?
