I think it would be great time to consider more use of animal workforce for our people, while a medieval period is by no way industrious, they did leverage the power of animals. As we see in our Immortal Oxen Storage cart, and the Oxen drawn wagons.
But we need MOAR, as you say!
Please consider these ideas:
On the Wagon Shop, have an upgrade option, to make use of Horse Drawn carts, they may be faster (and they should be able to escape from foot walking bandits), but carry less items, and do shorter routes, this would be better than having 50 people carrying stone from one store to the other side of the city. As a balancing factor, consider that both the Oxen and then Horses could be supplied by the Barn and the newly upcoming stables, right now we have free oxen when we create a wagon, just the cost of a bit of planks, this will bring some more balance.
On the Farm Fields, they can also be upgraded: for the main part, the fields aesthetics should remain the same, but the storage corner can be upgrade with a little building and the upgrade version will include an Oxen drawn plow / small cart for cleaning the field, sowing the seeds and harvest time. Again the oxen has to be supplied by the Barn again, and the tools can come from the Heavy tools items.
On the Hunter Cabins, on Tier 3, they can be upgraded a second time, this will add the option to buy domestic hunting hounds ( which would be supplied by the Trade Post merchants (just like cows). This will improve effectiveness against boars, bears and wolves and their dens and slightly improve hunting performance, if the hunter dies, the hound also dies or flees, anyway we loose it and have to buy again.
Finally on the Rat Catcher: They also deserve an upgrade, both aesthetic and performance, first for a Tier 4+ town, the current building is too lame, so upon upgrade we can bring the building in more in line with the aesthetics of a Tier 4+ city . Second upon upgrade, we should be able to use cats as a companion that will improve our rat catching performance, of course Cats can also be purchased from the Trade Post merchants, the upgrade can bring a monthly cost increase and see the animation of cats pursuing and catching rats in town will be hilarious and cute!

PS: Forgot to mention, now that Barns and Stables will be the source of Horses and Oxen for Wagon shops and fields, then the birth ratios have to be balance, first off 12 people tending 20 cows and only 3 births per year is ridiculous, at least should be 4, to justify the upgrade, and 4 people for 10 cows, 8 for 20 cows and 12 people would bring the birth rate up to 5 or six at least, that way that many people can be justified, so far is better to have 2 simple barns than 1 upgraded one.
