I’ve looked for a necromancer gunslinger-type build but am struggling a little. Maybe I’m on a fool’s errand, but any pointers in the right direction would be welcome!

Have you had a look at Death Knight? There have been Physical/Trauma gunslingers using Cadence and a pair of Deathdealer’s Sidearms in the past.
