I would love to see sheep as an alternative to cows or flax (protein, wool, milk, cheese)
Chickens or Quail would be great as a protein source
Horses or other beast of burden to improve transportation. It doesn’t make sense to me why wheelbarrows would be used to stock the trading post when wagons are available but only used for mines and work camps.

I would also introduce pigs because they were the main livestock in the Middle Ages,
If there are horses, oats would have to be introduced as the main food for horses. But I don’t know why they would be horses in the game.
Would it be possible to introduce new fruit crops, for example plums and grapes, and create wine production?

Horses would also be great for speed and exploration.

I love the wine production idea. If pigs were introduced…truffles? 
maybe even have the preservist pickle some eggs
